What to cook for Christmas dinner?

The house is decorated, the guests have arrived and the Christmas atmosphere pervades the whole house. For a Christmas dinner with all the trimmings, it is important to always have the right course on the table. In this article we will suggest some simple microwave recipes to amaze your guests!

Sweet potatoes with pink pepper au gratin on crescenza cheese

Preparation time: 15 minutes

Ingredients for 2 people:

  • 1 large, orange-fleshed sweet potato
  • (about 350/400 g)
  • 80 g of crescenza cheese
  • 1 teaspoon of chopped chives
  • 1⁄2 teaspoon of pink peppercorns
  • 2 tablespoons of extra virgin olive oil
  • whole salt to taste

1. Rinse the sweet potato well, leave the skin behind and pierce it in several places with a toothpick. Wrap it with wet baking paper. Place the sweet potato directly on the turntable. Activate the preset recipe Potatoes / Tubers → Sweet potatoes in foil (350 g). At the beep, turn the potato on the other side and press Start to continue cooking. Let it rest for 2 minutes.

2. Cut the sweet potato in half lengthwise and season with salt, pink pepper and oil. Cut the crescenza cheese into slices and lay it on the potato from the inside.

3. Place the sweet potato in the Crisp pan. Place the pan in the microwave and brown with the grill function for 4 minutes. Garnish with chives and pink pepper.

Mediterranean striped eggplant babaganoush

 

Preparation time: 20 minutes

Ingredients for 2 people:

  • 300 g of striped aubergines
  • 25 g of tahini
  • juice of 1⁄2 lemon
  • 2 sprigs of fresh marjoram
  • 1⁄2 teaspoon of toasted sesame seeds
  • 2 tablespoons of extra virgin olive oil
  • whole salt to taste
  • ground black pepper to taste

1. Rinse the aubergines well and pierce them in several places with a toothpick. Wrap them whole with wet baking paper and place them directly on the turntable. Cook with the Micro function at maximum power for 6 minutes, then turn them over and cook on the other side for 6 minutes at the same power. Let it rest for 5 minutes.

2. Cut the eggplant in half and, with the help of a spoon, remove the pulp. Finely chop the eggplant pulp with a knife and pour it into a bowl together with the tahini, salt, pepper, lemon juice and mix well. Chop the marjoram leaves (keep a part for the garnish), add them together with the oil to the other ingredients and mix again.

3. Pour the babaganoush into a bowl and garnish with the chopped marjoram and toasted sesame seeds.

Herb turkey meatloaf

Preparation time: 10 minutes

Ingredients for 4 people

  • 500 g of turkey breast
  • 1 teaspoon of dried mixed herbs
  • 1 sprig of parsley
  • 1 egg
  • 4 tablespoons of extra virgin olive oil
  • salt until integral to taste
  • ground pepper to taste

1. Cut the turkey breast into pieces. Put the turkey in a blender together with the herbs, parsley, salt, pepper, oil and chop well. Also add the egg and mix again.

2. Spread a film strip suitable for use in the microwave on the work surface. Place the dough arranged lengthwise in the centre of the film. Wrap the film around the dough to compact it and close "like a candy" tightening well. Prick the film somewhere to facilitate the escape of steam.

3. Place the meatloaf in a lidless container and place the container on the microwave turntable. Cook with the Micro function at maximum power, first one side for 1 minute, then turn and cook the other side for 1 minute at the same power.

4. Allow to cool, remove the film, slice the meatloaf and complete with a drizzle of oil.

Tuna in pistachio crust with basil

Preparation time: 10 minutes

Ingredients for 2 people / 2 fillets:

  • 2 tuna fillets (about 150 g each)
  • 30 g of shelled pistachios
  • 10 g of toasted sesame seeds
  • 2 g fresh basil (+ 2 sprigs for garnish)
  • 2 tablespoons of extra virgin olive oil
  • salt until integral to taste
  • ground pepper to taste

1. Put the pistachios, sesame seeds, a pinch of salt in a mixer and chop well until reduced to a fine grain. Also add the basil and mix again quickly.

2. Season the tuna fillets first with salt and pepper, then add the oil and grease all sides well. Pass the tuna fillets in the breadcrumbs pressing well on all sides.

3. Grease the Crisp pan and place the fillets in the pan. Place the rack in the microwave and place the Crisp pan on the rack. Cook with the grill function for 3 minutes. Then turn and cook the other side always with the Grill function for 3 minutes.

4. Arrange the fillets on plates and garnish with basil.

Strawberry and Brazilian nut crumble

Preparation time: 15 minutes

Ingredients for 2 people / 2 crumble:

  • 200 g of peeled strawberries
  • 20 g of Amazon nuts
  • 1 teaspoon of lemon juice
  • 15 g of brown sugar
  • 20 g of coconut oil
  • vanilla powder to taste
  • 15 g of buckwheat flour
  • 15 g of oat flour
  • 1 pinch of fine whole salt

1. Cut the strawberries into 4 parts. Chop the Amazon nuts with a knife.

2. Put the strawberries, lemon juice, 5 g of brown sugar, half of the walnuts, vanilla powder, 5 g of coconut oil in a bowl and mix all the ingredients.

3. Grease 2 microwave-safe casseroles with coconut oil and divide the seasoned strawberries.

4. Pour the buckwheat flour, oat flour, salt, 10 g of brown sugar, the remaining half of the nuts and 15 g of coconut oil into a bowl. Mix the ingredients with your fingertips until you get a sandy dough. Cover the strawberries with the crumble.

5. Place the 2 cocotte directly on the turntable in the microwave. Cook with the grill function for 10 minutes.
