A side dish that will surprise you with its pleasantly sweet taste. It is very simple to make: cook the sweet potatoes in salted water for about 20 minutes until soft. Peel them, cut them into circular slices and arrange them in layers in a buttered pan. Separately, make an emulsion of orange juice and maple syrup, adjusting it with salt and pepper. Pour it on the pan together with the crumbled walnuts and bake at 200 °C (180 °C if ventilated).
To make this Savoy cabbage-based recipe, blanch the cabbage in salted water for a few minutes, drain and gently open the leaves. Next, make the filling: boil the potatoes and mash them with a fork; add them to the eggs, grated cheese, salt, pepper and nutmeg. Place the filling in the centre of the cabbage and distribute the rest between the leaves. Tie the stuffed cabbage with kitchen string and bake it for about 25 minutes at 180 °C.
